My Son, Shawn, Gifted Me for Christmas a New 9.5" Shogan Series Chef Knife by Dalstrong.
The blade is 9.5" Precision Forged Japanese V-G 10 "Super Steel" at 62+ Rockwell Hardness! It has 66 Layers of High Carbon Stainless Steel Cladding forged to it! The Handle is black and made of ultra-premium G-10 Garolite(?) per Dalstrong! Boy and Girls the Shine and Finish on this Knife are Extraordinary! I believe Shawn Purchased it on Amazon and I hope at a discount from the MSRP of $299.99! In the beginning that was 2 Weeks Pay @ $1.25/Hr? Dalstrong publishes that each Shogan Knife spends 60 Days on the Production Line!

It's beautiful! Don't let it be a drawer queen, it's supposed to be used. Don't Japanese knives have a different sharpening angle than US and European knives?

Danjohnston949 - Happy New Years to you and yours, too!. My boy is in town from Houston/Galveston to visit. BBQ'd steaks last night, chicken wings tonight, lamb next and then ribs. He said "No brisket. Too much where I come from. We've got to teach those folks down there tri-tip" HA!
I have a Charbroil gas grill, Big Easy, Large gas smoker and small electric smoker, GMG Davy Crockett pellet grill. I also have a 160L Cabelas dehydrator which I use for beef jerky.

Large Big Green Egg, Weber Performer Deluxe, Weber Smokey Joe Silver, Fireboard Drive, 3 DigiQs, lots of Thermapens, and too much other stuff to mention.
The layered steel gives it strength, not sharpness. Still, VG10 will stay sharp for a long time with regular "steeling" - but I recommend you get a ceramic "steel" instead of a metal one.
