Keeping the oil well skimmed during the cook is just as important as filtering post use. Once something falls off the food and settles on the bottom of the frying vessel it burns and the oils days are numbered. Skim with a fine mesh strainer during the cook and then filter the oil as soon as possible into a container that can be stored in the dark.

I do like the Attjack solution as well but with the exception of bacon fat (which I save in an old fashion bacon fat container), what oil are you trying to extract? If you're doing a lot of deep frying and want to retain your oil, try buying a rig like this, made by TFal. I bought one on Amazon about 3 years ago and use it maybe 3-4 times a year (not a big deep fry guy). The oil is saved in a Tupperware type reservoir and can be stored in that container or emptied into another vessel. Anyway, works great for me.

I've got a similar T-fal without the reservoir, and just run the oil through a mesh colander lined with paper towels, into a pot, then pour that into a jug, and into the fridge. Only if I think I can reuse the oil again. I'll use it for chicken wings a couple times, then toss. Longer if its just stuff like French fries.

Dealing with used cooking oil is why I gave up on fried turkeys. They were fantastic but waiting on the oil to cool off and then what? Not worth the hassle
