I've had one of those for 20 years. It's a solid piece of gear. It operates a bit differently than a traditional stand mixer so you might want to watch some of the videos.

Is it a matter of the KA just being underpowered for what you need it for? I'd have to think those aren't set up to handle the workload you're throwing at it.
Also congrats on the new toy.
It certainly was not designed for my use, but honestly, comparing other brands, outside of what we are used to seeing at a store. KA is over rated, at least my professional 600 is, and the commercial 800 I looked at as an upgrade. This new one is smaller foot print, and pushes almost 2 times the amount of flour and water. Less money and 5 years more warranty.
