I have damaged my big bamboo cutting board and destroyed a couple of those white plastic ones. I love using my electric knife, especially for those perfectly even brisket slices. Anybody have any suggestions?

Virginia Dave, I am not much help but I think I would look for an end grain Hard Rock Maple or similar wood Board. You can repair or scrape minor wounds and Reoil the Board, Dan

Agree with Danjohnston949 - end grain rock maple is where it's at. Not cheap and does require a little more care than the plastic boards that can be tossed in the dishwasher, but man is it sturdy.
I wipe mine clean, spray it with sanitizer (diluted bleach) - let it dry and then a light coat of food-grade mineral oil. I've had my board for about 10 years now, should be good for 10-20 more.
