The Spring 2026 Texas Hill Country MeatUp Is Here!
The first group of attendees are now on their way and will be arriving in San Marcos soon. The majority of the group will be arriving tomorrow, Thursday. The weather looks like it going to cooperate for the most part. No rain is forecast until Saturday/Sunday. Highs will be in the mid to upper 80’s, so pretty much a cold front! 🤓 Anywho, feel free to start posting here with your pics and commentary! There’s going to be a special gift for everyone tomorrow, courtesy of one of our members. Happy Hour in the hotel lobby is 5:00 ish Thursday. Afterwards we’ll be heading over to Garcia’s Mexican Restaurant to have dinner at around 6:45 or 7:00. Anywho, I’ll see everyone tomorrow!

We’re our way tomorrow. John, was Garcia’s the place that wouldn’t divide checks for our group? I would like to avoid that situation if at all possible.
Sunny, I could be wrong but I don’t remember this happening at any of our MeatUp restaurants, 🤷♂️ but just to be sure I called them. Separate checks is not a problem! As is customary, just tell your waiter/waitress when ordering. I also made us reservations there for 7:00 tomorrow [Thursday]
J-Melt what I am remembering is the the year after you were present we went to a different Mexican Restaurant and they refused to separate the bill. I just didn’t remember the names of the places. I think we have been to Garcia’s more than once.
Large Big Green Egg, Weber Performer Deluxe, Weber Smokey Joe Silver, Fireboard Drive, 3 DigiQs, lots of Thermapens, and too much other stuff to mention.
I’m all settled in. Austin was possibly the quickest plane-to-room I’ve ever experienced; and if you want to count
THE BUS INSTEAD OF A PLANE
from Wilkes-Barre/Scranton to Philadelphia arriving at
AUXILIARY GATE F15
at 4:45PM for a flight boarding at 5:01PM at
GATE C25
about half a mile away, to which I arrived at 4:59PM, there was virtually no layover in Philly. But at Austin, my bag came off the chute as I walked up to the carousel, which was on the way to the rental car center… my car (a really nice Kia Telluride) was waiting right as I walked up to the rental area (some kind of fast pass thing I signed up for)… and I used mobile check in to go right to the room.
I am here too. At the Schatziland RV park. 5 minutes from the hotel. I had problems with the first place so I had to relocate. I’ll see you guys tomorrow.
Already missing not being part of the action. Kev-dawg, you'll need to be my official spokes-stand-in....except you don't get up early enough for breakfast...

Wish I had the time and the stamina to meet with you guys, its been a while. Just had my knee replaced 8 weeks ago and am still on the mend but doing well, so trips are few and far between these days.
I suggest, if you are doing a bbq crawl in Austin, that you check out two places. First is KG's BBQ. A food truck run by an Egyptian who's food is best described as a fusion between Texas BBQ and middle eastern flavor profiles. Right next door, after you have gorged yourselves on food, there's the Oddwood Brewing pub to whet your whistle.
But wait, there's more. Just down the block in walking distance is a new up and comer call Parrish BBQ. Another food truck, they do Texas BBQ with Cajun twists. Recently given a Michelin nod.
Regardless of all the shenanigans you may be up to, I hope you guys have a great time. And for any first timers, welcome to Texas, the greatest place on planet earth!!!
From bottom left going up: beef sausage (dry, crumbly), pork serrano and Oaxaca cheese sausage (very good, not very spicy), Mexican street corn (very good and citrusy),
Center going up: brisket taco (brisket was tasty but a little dry), pulled pork taco with chili verde (very good), Smoked pork belly with citrus hot honey and sesame seeds (the best item I had).
I don't do pickles or pickled onions but everyone said the onions were excellent.
