    My lunch at Dayne's was the OG Brisket Cheeseburger, Brisket Bologna Melt, Meat Church Voodoo rub infused Jalapeño Cheese Sausage, Pork Ribs, pickles and pickled red onions. The food was great; the photographer was awful!

        I don't see the desire for beef rib plate. Tried them a few times and just give me a ribeye instead, heck of a lot quicker.

        Jerod, I’m not a fan of beef ribs either. Too much fat. I’ll take a ribeye any day over a beef rib also.

        How do they cook all those sausages w/o temp probes?? Side note- beef ribs are the bees knees to me. Love 'em.

      First, let me say that whenever you go to one of these places that are in Texas Monthly’s Top Ten you tend to look for perfection. Secondly, I don’t have the most refined palate, but I thought everything I had was good. So, here goes my evaluation of each of the items we had.

      Probably the star of the meal was the double smash burger, but that might be because I don’t believe I ever had a smash burger before this one. If I understood Uncle Bob correctly this wasn’t a true smash burger because it was cooked on both sides. That being said with the cheese and sauce I could still taste the beef. On the other hand while the Bologna Melt was great, I think the bologna taste was overwhelmed by the sauce and cheese. But I would order it again.

      The ribs were very tender and wouldn’t have passed the pull test, but who cares if you like tender ribs. They were glazed and looked inviting to eat, but for I think they could have used a little more seasoning. Now I am starting to sound like one of the judges on BBQ Brawl.

      The brisket was extremely tender and as Uncle Bob suggested may have been held a little too long. The bark seemed a little soft and I thought it could use more seasoning.

      I got the voodoo sausage which I think is only available on Saturdays. It was a real hit for me, but I doin’t know if I ever had a sausage I didn’t like. They used Meat Church’s Voodoo seasoning, added some cheese and Jalapeños. It had a good kick. Bob and Lee shared some of there Jalapeños and Havarti sausage which had a little less kick and seemed more creamy.

      The sides we chose were Apple Slaw and Broccoli Grape Salad which were good, but kind of tame compared to the other sides.

      When all is said and done it took me an hour and fifteen minutes to get to Dayne’s. Would I drive there to get some BBQ? Probably not. Would I drive there to meet some Pit folks and have some BBQ? Absolutely! If I was in the area I would stop by, and if Dayne’s was closer to me I would be a regular. If I was not trying to sample everything I think I would get the Smash Burger and one of the sausages along with the Fiery Creamed Corn.

      Purc and Soonerpop and I are planning a trip to Cattleack Barbecue this coming Friday. Fellow Pit members are welcomed. We’ll keep you posted.

          Our typical gas stop! And sometimes the BBQ sandwich which isn’t in Texas Monthly’s top fifty, but It’s not half bad.

          I stopped at Buc-ee's in Richmond Ky, cpl days ago. Got the briskie slices. Not impressed.

          Agree Alan, I tried theirs once and that was enough. Non BBQ loving tourists would probably like it, but not realize there's so much better out there.

            That one is still in the air. It’s complicated by the fact that my cousin lives in Lafayette, and while he’ll always be family, our lives went in different directions about 40 years ago. It would be like having two events at the same time, and neither would get the full attention each would deserve.

          Whew, finally made it home. Someone please alert the media!

          Based on a recommendation from Uncle Bob, I stopped here for an early lunch on my way home in Hearne, Tx. Had a chicken fried steak, mashed taters with cream gravy and fried okra…..

            Uncle Bob you could also slip up I-35 to Hillsboro and go to Buckee’s. It’s only 21 miles from the new address.

            Yeah Lynn, my Buc-ee pic above was the Hillsboro unit. There's also a Buc-ee in Temple, so going to Oscar could be a two-fer.

            I thought maybe when Buc-Ee's Hillsboro opened it would make the Temple location less chaotic. Ha! Both are chaotic. We used to stop in Temple to get gas when returning from visiting kids in Manor, but a Quik Trip opened 1 exit north so we stop there now.

          I was catching up on my YouTube videos this evening when I noticed that a week ago, Chud's BBQ / Bradley Robinson posted a video about Dayne's BBQ!



          It's a little on the long side (42 minutes), but it is typical of his series in which he and his assistant Bones travel to a Texas BBQ place, meet the owner, talk BBQ, tour the pits, eat more food than should be legal, and then go home and try to recreate one of the dishes they had.

          Coincidentally, this video is about recreating the brisket bologna melt. Timely.
