    I will bring some pork ribs, probably baby backs J-Melt . We can figure out how many racks once we have a confirmed count. I will bring them in a cooler and we can figure out how to reheat when I arrive. It sounds like the Backwards will be working pretty hard!

    (This was packed cold, so it looks dry, but it's not dry. Hopefully, I sealed in all the juices that will come out in the bag during SV the day of.)

      Amanda and I will be coming and we will bring 4 racks of ribs. We’d also like to do the store visit so it sounds like we should meet there at maybe 11? I’d like to get beef cheeks at least.

      The ribs will need to be reheated so we’d need to build in some time to get them ready for service if you want to eat at 12:30.

      It’s sounding like a lot of people want to reheat food when they get here, so would y’all like to do the Park Packing run at 10:30am so lunch isn’t too late? Let me know and I’ll post a finalized schedule to confirm. Anyone not doing the store run could plan on showing up at my place at 11:30am.       Here is the most up to date list that I have of what people are bringing. Please let me know if you want to update what your brining and I will adjust this post accordingly

      We currently have approximately 10 adults and 2 kids.
      Meat
      STEbbq - 4 racks of ribs
      mrteddyprincess - Brisket flat & burnt ends
      troymeister Kettle Fried Chicken
      Meathead - Wagyu flank steak vigneron method

      Sides
      rmeugene - 5 bean dish with beef and bacon
      Me - Smoked double baked Potatoes

      Dessert
      Northofchicago Smoked Pineapple Upside Down Cake

        Hey all, well of course plans change even this close. I'll be hosting family that weekend, they are coming in for a wedding I knew nothing about. Smart choice not letting me know
        So I'm begging off and hope to make the next one.
        I'll be drooling most of the weekend thinking about what I'm missing......

          It’s looking like I am going to try my hand at smoked double baked potatoes. Never done it, but I feel like it would be a fun way to use the smoker without adding yet another meat to our very meaty meatup!

            I like it. A variety of toppings(cheese, sour cream, onions) and folks can customize their potato as desired. Yummy.

          I have about 4 lbs Wagyu Flank to be seared over grapvines and sprinkled with Meathead's Smoked Red Meat Rub. It will trim and shrink to about 3 pounds. I will cut them in 1/4-inch slices so there should be enough for everyone to have 2-3 slices as fingerfood/apps. Maybe I'll buy another at the meat mart, whatever grade they have.

            Park Packing’s sale for this week came out today and the prices are looking better than they have in the last couple of weeks!

            I’m very disappointed to report that I will need to drop out of the meetup. Wifey fell and badly tore a hamstring on Monday. I need to take care of my girl. Have fun everyone! I look forward to the reports and photos.
