Putting only one 11 pound brisket on the Yoder Wichita July 4th morning EARLY.
Would it be better on top shelf or bottom shelf?Middle of grates or near the exhaust?
I have 24 x48 offset; Stack exit is centered/near lower level shelf
My heat travels on a gentle sine wave = 2nd shelf middle & bottom shelf neat the exit is warmer
Top shelf near the exit is a bit cooler and middle of bottom are a bit cooler
Biscuit Test proved this out

You should have (maybe you did) done a toast test of some sort when you first got your grill broken in to see where the hot and hotter zones are... orientate your brisket in a manner that takes advantage of that (flat towards the less hot zone, point towards the hotter zone...)
