Super cool. I've looked at these and have wanted to try it for some time. There's a guy who sells this equipment in California - NorCal Ovenworks - and I was thinking of picking up a kit now that I have actual firewood for my offset. Let us know how it turns out!!!

Knock the cob webs off your wallet and go buy a big chunk of meat to put on it. Vacio (the belly part of the cow) is popular here in Argentina. (Not sure what you call that cut in English) Get a chainsaw while your at it, you will need it.
