Take it from me these early struggles are laying a great foundation of experience for you going forward. I went through exactly what you are now. I started off on a cheap Brinkman Smoke N' Pit and did all the mods to it. I refused to burn just charcoal in it because I wanted to learn fire management and I wanted that flavor only a wood fire can provide. I slowly improved but it was always a struggle. Minor disturbances that cause small problems in a eos are amplified ten times in a cos.
I used that old Brinkman quite a few years. I finally was able to afford to upgrade to a custom patio offset made from 3/16" steel. Solidly built and well designed. I was more than amazed at the difference in operation.
It didn't make me a better cook right away but it sure made it easier to cook! I became a better cook because I didn't have to focus all my time and energy trying to maintain a temp. I had more time to focus on the food.
The day will come when you will look back on these days of struggling fondly.
