My Butt survived the storm!

So yesterday was game day and I decided it was time for another Boston Butt. My NFL team pulled off one of the most unexpected wins in ten years and I pulled off a victory with a great tasting Boston Butt in spite of a lot of rain on the smoker and difficulty keeping the temperatures low.

Boston Butt (deboned - I have no idea why the butcher removed the bone when I didn't ask head of time do to it, but it surprisingly didn't matter).

Salted with Kosher Salt 24 Hours. Memphis Dust Rub, apple juice sprayed hourly after 2 hours. Pulled at 203 degrees.

Looking at the scores I'm gonna guess that you're a Jaguars fan? Those pics are super interesting. I NEVER get bark like that - black. Is that bc of wood smoke? The color I get is closer to the lighter section in the one pic. Looks delicious.

Yes I’m a Jaguars fan. We are rare around here! I was extra heavy on the rub which has a lot of sugar which gave a great bark.

Mine always look 'bout like that, on whatever cookers, (I have a few ), different rubs, different temp cooks, etc., when they've achieved IT an' probe tender...
I dunno, JC...
(Course, so do my scrambled eggs, gravy, cheese sauce, etc...)
