Hi, my name is Darrell. I'm an OTR truck driver for over 25 years. During my off time I love doing backyard cooks. I have a 48" Lang Deluxe smoker, Rec-Tec pellet smoker,1 Weber Genesis 330, 1 Weber Performer (blue), 2 Weber kettles (1 black and 1 Copper), 1 26" Weber kettle, a WSM, 8 Maverick Redi Chek thermometers, a PartyQ, 2 SnS, Grill Grates, Cast Iron grates, 1 ThermoPop (orange) and 2 ThermoPens (pink and orange) and planning on adding more cooking accessories. Now I have an Anova sous vide, the Dragon blower and 2 Chef alarms from Thermoworks.

The best whole hog I've ever had came from Mike West's cooker that he built himself. A modified oval (fuel?) tank that had a rotisserie in the top half. The bottom half had an expanded steel fire grate just off the bottom. The special touches were two rows of rectangular doors across the front bottom. The lower row had adjustable dampers and were also used to add charcoal. The upper row hinged at the bottom and had expanded steel sides and backs. They were triangular viewed from the side. These were for logs that provided a nice smoke flavor to the hog. Once the coals were good and the hog turning, he'd put some logs in and they'd pivot in place over the fire grate. For those in the know, the cracklins were to die for.
