I thought I'd share how I use the SM attachment that my Secret Santa, ( rlozinak ), gifted me in '23. I need to use it more often 'cause it produces great food. The two steaks I cooked tonight using it were some of the best tasting steaks I have made.
I had some fire bricks left over from building our house ~ 40 years ago, and I used two of them to raise the wood grate higher in the kettle so that I could get a better sear.

When I had the sear that I wanted, I raised the grate and used a griddle dome to keep the heat and smoke closer to the steaks.

And when I pulled them.

I mixed the steaks up, (wife likes a bit more done), and wound up with the one intended for SWMBO - more well done than I prefer, but it was still juicy , tender, and very tasty.

Now I just need to cut the white oak log I kept when the tree surgeons took down a bunch of trees into 8" pieces and then split them.
