I’m fresh off the Texas A&M BBQ Camp in College Station and looking to upgrade my tools. I live in Virginia Beach, so shipping from the usual suspects (Klose, LSG, etc.) is daunting. I found a closer manufacturer in North Carolina and see that a few of the veterans (looking at you Bad Hat BBQ) here have experience with Kearry’s offsets. Do you have any advice on configuration before I order? Many thanks!

I absolutely loved working with Kearry Hinson (Rocket Grillz) He can do reverse flow or traditional, I really like what he has been doing with the firebox& firebox lids on some of his recent models. Just be aware that these get super heavy. I can push mine out my pavilion but it takes a bit of effort...Delilah produces really great BBQ and fire management is superb!
Spend some thinking about how big does your rig need to be. Mine is deep enough to have large foil pans going across. If I cook more than 10 slabs at a time I need to rotate the slabs for even cooking (I can do 14-16 w/o standing racks).
