I am perhaps crazy enough to try this.
Jonny "Jirby" White is co-owner of Goldee's BBQ, the current Texas Monthly #1 BBQ Place in Texas.

I've been watching brisket trimming videos in preparation for a Memorial Day brisket cook and I ran across a video he did several years ago in which he constructs an offset smoker out of essentially nothing but cinder blocks, all for (at the time) $200.
Now, there are clearly some caveats to this video. It was produced during the height of the pandemic, when everyone was putting out weird videos. Also, from watching his other videos (which are quite informative on how Goldee's did things from 2021-2023), he has a deadpan sense of humor and can be challenging to tell if he is joking or not. He does say he's cooked on the smoker, but he does not say what he cooked or how it turned out.
Still, this is far more tempting than it should be lol. I even have a spot (decaying garden shed) in my backyard where this would fit.
Temperature control must be maddening to impossible on such a design.....I just remember all of the threads on weld leaks on the smaller Home Depot offset smokers on here. It does seem like a clever idea. I even have some left over cinderblocks from a garden project in the garage!
