    Any Uses for a Cheap Offset Smoker?

    I (like many others, I'm sure) am a proud owner of a cheap Char Griller offset, which for myriad reasons is basically unusable for anything important or consequential. Luckily I have other smokers. That being said, it's basically worthless for resale and I am a gear hoarder. Does anybody have any fun projects/cooks that can be done with a worthless, bombed out offset? I'm not in love with the idea of modifying it into being a good smoker since I already have a kettle and a PBX, but I'm curious if this could be a useful cold smoking rig, or if there are any Spider Venom style accessories which could make the poor insulation less consequential (I know this would just make it a fuel hungry monster, but it's something lol)

    You can cold smoke in an offset. I do it all the time with pellet tube(s) in the firebox.

      I had a COS I smoked on for years. I modified it to make it reverse flow. I bought welding blankets to cover it up in the winter. I used a box fan to control the temp. Seriously, if you can produce food on a COS, you have earned the title of Pitmaster. It's not easy to do, but it can be done, and the end result will probably be buying a legit offset.

      My frustration came down to I was smoking some really good turkey breasts on that thing and some Thanksgivings I could not pull off that smoke because it was too cold outside even with the welding blankets.

      The smoker I bought is 1/4 inch steel and I can smoke below zero now. So, yeah, don't throw it out for now. Have some fun with it, and if nothing else it does make for a good cold smoke chamber.

        Cold smoking is a great one. You can also use it as a kiln, to help dry/season any wood chunks or splits that you may cut or otherwise acquire for your other cookers.

          I have a really old OKJ offset that is still thicker steel, but rusted in MANY places and falling apart in others. It’s still my favorite smoker to use for “big” cooks and other cooks where I want max smoke. Don’t give up on your rig! I’ll bet that you can turn it in to one of your favorites with very little effort or investment. Just my 2 cents. Good luck, I wish for great smokey adventures on your COS!!!!
