    Reverse MCS?

    I've shown pictures here before, and mentioned an offset that my dad designed and had his shop put together back in the early to mid 80's. He made several hundred of them in different sizes (2x3, 3x4 and some big trailers) as customer gifts to big/loyal customers of the business back then. The one I have is an early prototype that was made from 304SS, rather than cold rolled steel like most of the models. So, it just keeps going and going. It doubles as a large charcoal event grill, with a slide in charcoal pan for the main cooking chamber. And while still perfectly usable, it is starting to show some age, and needs a few repairs soon that require some welding capabilities.

    Also, the fact is, since discovering Amazing Ribs, and learning what an amazing cooker a simple Weber kettle can be, for smoking as well as grilling, then winning a kamado here, I've just used the offset less and less. Why burn through 4x the fuel for a cook and have to feed the fire every 30 minutes if I can sleep while the SNS burns for 8+ hours on a load of charcoal and wood chunks?

    However, the fact that my dad built it around 1984, and took it home, then transferred it to me around 1994, and it for many years was my only grill/smoker, has kept me from getting rid of it. The sad fact is, it was last used for my mom's birthday in August 2023, and before that, for Thanksgiving a year or two prior! If I didn't have so many other ways to smoke/grill, it would still see more use.

    A couple of weeks ago, my 32 year old nephew's wife contacted me to ask advice on a smoker, as she wanted to buy him a smoker for Christmas, but only had a $300 or so budget. My advice was to look for a good deal on an Oklahoma Joe Bronco. But then, as Thanksgiving approached, and I started looking at how I was going to smoke my turkey, I was standing there looking at the offset, and decided to have a conversation with my nephew's wife, and my nephew if she was agreeable, on Thanksgiving day.

    Turns out, she was not hiding the Christmas purchase from him, and she in fact brought up the subject at the Thanksgiving table. I then told my nephew to talk to me after dinner, and I might have another way for him to go...

    As a background, my nephew is a certified welder, and has a TIG welding machine in his garage, where they live about 90 minutes from here....

    So we took a walk outside, and I showed him the cooker that his grandfather (this nephew is my sister's oldest son) designed and built. He was instantly sold, as he is a welder himself, and loves to fix things up. He is the only DIY type in my sister's family, and inherited that gene from my dad, as my brother in law... I'll stop there! We pulled things apart, looked at them, and I showed him a couple of things that needed a little TLC, and gave him recommendations on improvements I would make if I had the capability to weld stainless. And recommended some gaskets in a few strategic places.

    He was in his wife's little car that day, and not his truck, but will show up in the next week or two to load up the smoker...

    She has served me well since 1994!

    Thankfully, I don't feel guilty this way, and my Dad approves of it moving to his own grandson. My son doesn't have the space for it, or the skills to fix it up and keep it going. This was the right decision.

    And.... it frees me up for a round of MCS down the road! . Maybe a barrel smoker or a Smoke Vault or something similar will be in my future. I do have a natural gas hookup a few feet from where the offset currently sits...

    What a perfect solution for everyone!

    As you pointed out, it gives you space for more MCS and this could give your nephew some MCS as well, so I fail to see the "reverse" part of this.

        Yeah, its reverse MCS in the sense I will have one less cooker in the backyard.

        At one point I think I was up to *9* cookers in the backyard, around the time this picture was taken there were 2-3 around the corner, near the pool.

        This was prior to getting a griddle in 2020, and a kamado in 2021. I gave away a kettle to a friend, sent the 2002 Genesis to live with one daughter, sent back the "stored" dual fuel cooker to my son in law once they got into a house, and sent my son's Spirit 3 burner back to him once HE got into a house. I was "grill storage guy" for a while there when they were in apartments.

        When the offset leaves I will be down to the Camp Chef 6 burner griddle, the SNS Kamado, the Weber Performer and the Weber Genesis II 4 burner. And to be honest, that will probably cover all my needs for years to come. But MCS exists, and the struggle is real!

          I will regret saying this but I think mine is under control. I mainly cook on the kettle and chimp these days. The wsm is on the rv and I haven’t used it in a couple years, and the bronco once or twice in the last year. And I have a couple in the garage that haven’t been used in several years. Older and wiser maybe? Anyway good deal on passing it on.

          I never thought I would be a big griddle fan. It is really nice having the realestate to do a huge batch of stirfry for a group or just me going out and cooking up a pound of bacon followed by eggs n pancakes w/homefries. One cooker, the food is all fini at the same time. Only one cleanup. Prob my most used cooker. Costco has the Blackstone 4burner currently at a shade over $300-330. with hard cover.

        Wonderful story! You get to keep it in the family. It frees you from the guilt of not fixing it and cooking in it. If you ever want to cook on it I am sure your nephew will let you and best of all I’ll bet you have a future invite to taste one of his cooks!

          Haha. It will live about 90 minutes away, so while I might eat something from it one of these days, doubt I will be traveling to cook on it...

        Awesome that this smoker made by your father is staying in the family and gratefully received by your nephew. A great feel good story. I have a large offset too that is only being used occasionally now. I would love to hand it down to a family member, but I do not see that ever happening.

          What a wonderful thing to do! It was meant to be. A grandson with all the right skills and equipment needs a smoker? That’s not a subtle hint, it’s an outright flashing sign. Way to go Jim!

            Now I gotta figure out how to let my son know I did this, and offered the smoker to his cousin.

            My son was not here on Thanksgiving due to COVID. But... his wife already made him get rid of a Blackstone 36 he picked up for free, as she didn't want 3 grills on their patio. He has a Weber kettle and a Weber Spirit 3 burner, and apparently that is his limit! I didn't see his wife letting this offset park in their backyard, and he doesn't have the skills or welding equipment to fix it up.

            To be fair, my daughter in law was raised in family of multigenerational hoarders. I think it led her to be the total opposite. She is the biggest clean freak there ever was, and cannot abide clutter of any sort. You could eat off their floors, and she is very minimalist. My son can't have anything in the garage even that is not hidden inside a cabinet, otherwise his wife's OCD starts kicking in...

            She probably can't stand seeing all the crap in my backyard and garage! I have a 24x24 "2 car" garage that has so many tools, fridges and stuff in it, that it has been a 1 car garage for 15 years or more...

              Bad news doesn’t get better with age (this isn’t exactly bad news) and likely your son knows he wouldn’t be able to store/keep it anyway. The fact that it’s still in the family (direct blood) is a huge plus. It feels right to me so hopefully your son feels the same way.

              synodog my son is coming over Wednesday so I can resolder all the connections in one of his guitars, which he made a mess of due to poor equipment and soldering skills. I'll talk to him about it then.
