I have access to a Two Door Side x Side Traulsen commercial Refrigerator that I'd like to convert into a reverse offset stick burner. Since I've never built anything like this I'm enlisting the help of some friends and family members who weld and are pretty handy in fabricating.
Needless to say I have several question about how to build an efficient, safe smoker. The refrigerator shell is made of stainless and I believe parts of the interior are anodized aluminum. Is the anodized aluminum safe for cooking? If not it really doesn't pay to go any further with this project. If it is, another important question is what type of insulation is in the walls, doors, top and bottom of the unit.
If anyone has experience in building this type of smoker, please reply and let me know how to start the process! Thanks in advance! AJ
