              Okay, I decided to end the burn in after five hours at 300. Rock steady temp the whole time. The bonus is how little charcoal was used. It’s pretty clear that overnight low and slow will not be an issue without even going to the deep charcoal basket I bought anyway.

                    Okay. The first cook is in the books! I do believe I will keep this grill.

                    I was working in darkness and rain, trying to hurry to avoid the strong storm we were warned of. Fortunately, no storm materialized. But I didn’t have the time to sort out a glitch with the UltraQ connecting to WiFi.

                    Got a couple of nice, thick boneless ribeyes. Dry brined an hour or two. Used two Tumbleweeds in succession to get a tray of lump with some hickory off to a quick start.

                    Just a few minutes later, I was ready to shut the lid with the controller having a target of 275 and went back in to get the steaks. They went on while we were only around 100 so they could get plenty of smoke. They were on the indirect cooking side. At around 90 internal, I went to 325 on the cooker.

                    I also put some asparagus with butter in a small cast iron pan and set that in the back corner of the indirect side. I took it off as I opened up the grill for searing.

                    When the first steak hit 110, I disconnected the controller and opened the lid and the air intake on the side with the charcoal. I had a raging fire in just a couple of minutes and moved the steaks into the inferno with the charcoal tray set up as close to the grill as it can go.

                    I didn’t time it, but I would guess it took about 5-10 minutes of flipping frequently to hit the perfect temperature.

                        Fantastic cook on the new cooker. I've been eyeing that one as a "all-in-one" for a while as there is normally only my wife and I. It would look good next to my two other LSG cookers, at least one of us thinks so. Will be watching your progress closely.
