    Hirsch's Meats in Plano

Hirsch's Meats on Parker in Plano ... http://www.hirschsmeats.com/

Just bought a prime brisket and pork belly for bacon. Will update you after July 4th.

Smoked the brisket on oak and it was delicious. Thawed the frozen belly (approx 5 lbs) and cured the it following Ruhlman's method with added maple syrup. Cooked about half into bacon strips and it was incredible. Made trimmings into lardons for a poached egg salad. Great meat.

Pete's Fine Meats on Richmond Ave in Houston. Fantastic service and selection.

I will second the recommendation of Hirsch's in Plano. They also have a selection of wood chunks for smoking.

This was on my list to try, now that I'm up this way.

Try Deep Cuts Dallas. Say high to my son while you're there.
