Just bought a prime brisket and pork belly for bacon. Will update you after July 4th.

Smoked the brisket on oak and it was delicious. Thawed the frozen belly (approx 5 lbs) and cured the it following Ruhlman's method with added maple syrup. Cooked about half into bacon strips and it was incredible. Made trimmings into lardons for a poached egg salad. Great meat.
