    Iowa Premium Brisket?

    My local meat market just started to carry Iowa Premium beef products:

    Located in Tama, Iowa, in the heart of corn and cattle country, Iowa Premium procures and processes only corn-fed, Black Angus cattle hand-selected from family farms in Iowa and neighboring states. We specialize in USDA Choice and Prime grade beef and offer a full line of boxed beef products and by-products for domestic and international customers.


    They are running a special on 100% Premium Black Angus Brisket for $3.49/lb. I live in upstate NY (just outside of Rochester) and briskets are tough to find!!!

    Anyone have experience with Iowa Premium?

    Buy one for the KBQ! That thing can cook a turd and make it tasty!

    I talked to the butcher today. He says they have full packers - again, not easily found here - mostly flats. I am stopping by tomorrow afternoon. I will take a few photos of the cryo packed beasts and post.

    smokinfatties - I am dying to do a brisket on my KBQ! I had an old propane vertical and batted 1 for 3 with briskets. This will be the real test ;-)

      I would get a couple and wet age them. Brisket on the KBQ is amazing! I used to inject and spritz them every half hour- not necessary on the KBQ! AND it will cook very quickly!

    Good advice! How long should I age them? Also, should I separate the flat from the point?

    Last question for now. Can I cut a packer in half and smoke just 1/2 (freezing the other half for later)?

      Let it age in the refrigerator till you air pockets about the size of a quarter. ( in cryovac) I do not know if its warped in paper.

        Thanks uldt13, yes it came cryovac sealed. I did indeed let it age roughly 40 days in my fridge. There were a few small air pockets.
        I have smoked the brisket - came out great. I froze a good portion of the flat and the entire point in vacuum sealed bags ready for Thanksgiving!

      Iowa Premium Beef is a GREAT product! Don't be afraid to feed this meat to your Family. You will like it.

        Thanks Skip. My local butcher just started carrying Iowa Premium Beef. So far, the brisket I tasted was great - as you said!
