        Just to follow up....

        I heard back from Meat N' Bone, and Pattons. Meat N' Bone don't do bone in, Pattons does, but is skin off and I would prefer skin on. So I'll probably just check local suppliers and might go with a deboned belly if it has a reasonable amount of meat on it.

              I am just north of Clayton in NC,.about an hour. When you get there see if there is a local butcher that sells retail. Sam's and Costco clubs are good, but I don't think there are any close to you but ask. I buy Cheshire pork from a mail order company, Heritage Farms Cheshire Pork, www.buypork.com. I always use the phone to order so I don't put my CCard number on the website.

                There are any number of places to get spares, most grocery stores have commodity spares and Wild Fork. For specialty mail order, as others have said, Cheshire Pork and Meat and Bone, but expensive. Bone-in skin-on belly is not popular in the US, I used to be able to get it from a local whole animal butcher, but terribly expensive and covid wiped them out. Then I discovered that a well stocked ethnic oriental market sold their belly bone-in, skin-on at commodity pork prices. Long story, but there are likely oriental markets in a big city like Atlanta - check with them. Pork belly with the bones is apparently part of their cuisine, or as near as I can tell given the language barrier.
