    Costco and Blade Tenderized Meat

    Pit member JoeSousa alerted me to the fact that Costco blade tenderizes some of their meat (https://pitmaster.amazingribs.com/fo...y-orange-grove ). I find this disturbing and I'd like to hear from Meat Head , other Pit folk,and, especially, Jerod Broussard about this practice. Fer cryin' in the beer, they're "tenderizing" a prime tri-tip. Maybe we should all just eat baby pablum?!

    Yeah, I guess they figure everybody is cooking to well-done.

    Read the package well. Here is where sous vide would really shine on a tri-tip, tenderness and microbe reduction.

    I would suggest talking to the butcher. Last time I went to Costco all the prime tri-tip was sliced into steaks. So I talked to one of the butchers and he went in back and cut me some fresh.

      If you buy it in the bulk cryovac it is not tenderized and you can save some bucks by slicing it yourself. If you don’t see what you want, just ask. The other day I was looking for sirloin and they had choice grade steaks for $7.99/ lb. No bulk. I asked and he brought me out a cryovac of prime grade for $5.79/lb!
