    A little Costco info.

    I was talking to the head butcher - not really sure he is a butcher though - and asked if he could cut steaks to order. I told him that I would be lookin' for some in the future that were ~ 1.75" thick. He said they could cut ribeyes to order, but not filets. He said that filets come cut into hunks about 6" long and that they just cut those into 4 pieces. I might just pick up one whole and cut it myself - two real nice steaks and the rest for kabobs.

    If you get cooking channel toon into "Good Eats" on either Sunday Sep 10th at 11pm/10c or Monday Sep 11 2am/2c for the episode "Tender is the Loin 1" he shows how to butcher a whole Beef Tenderloin.       They have huge tenderloins. I like your idea of making your own.

        TO clarify - the filets they cut into steaks come pre-sliced in hunks about 6" long. The whole tenderloins you see in the case are not cut into steaks by Costco.

        JCGrill - yes you can, and that would be the preferred method, but the smaller piece is less than half the price of the larger one.

      I called to see if they'll cut me a big strip loin roast and the meat manager said sure! Getting it this afternoon.
