Hey there. My name is Harvey. I live in the Dallas/Fort Worth area. I'm originally from north Louisiana, so I bring a little bit of that with me. I currently have a Weber 22" kettle, but I'm going to get a Pit Boss pellet smoker or a WSM in the next week or two.
I don't eat pork, so my main focus is beef. I want to get some good brisket technique under my belt for moving on to other things.

PS: I should add that I have huge hands, so I'm always looking for recommendations for XL or XXL cut-resistant and heat-resistant gloves.
