Lol, I should said "REALLY small": it’s a Weber Smokey Joe 14†for now, probably be picking up an 18†in a month or so

patcrail Smokey Joes are Great Cookers, I have five of em, an LOVE cookin on them. I've posted several Smokey Joe cooks, over in th Weber Kettle channel, an am a staunch advocate of them. LMK if ya ever want any tips/tricks, or questions answered...chances are purty good I might could help...
Th Jumbo Joe is also big fun, but I haven't used it nearly so long...

The first cook turned out great! My first time trying reverse sear, and first cook on this grill, so I overshot my medium-rare a little, but the ol’ lady’s medium turned out perfect! I underestimated the "carry over", so had to cut the sear off early, but they were damned tasty, especially for $8 grocery-store strips! Large Big Green Egg, Weber Performer Deluxe, Weber Smokey Joe Silver, Maverick 732, DigiQ, and too much other stuff to mention.
Them’s steaks!
1) The perfect is the enemy of the excellent.
2) If it tastes good, you did it right.
3) Following those with specifics, "choice" steaks are fine. Overshooting medium rare is fine. Smokey Joes are fine.
All three are pretty good, actually. It’s a journey, the cooks are just stops along the way. Enjoy the ride! Welcome!
