Welcome to the pit. I too reside in NH. A 500 gallon pit is a sweet rig. I would suggest you pick up a small dedicated smoker to practice on while you build. Develop your recipes. That beast will burn a lot of fuel and unless your cooking for a large group it will be expensive. Find a PBC or Komodo to learn on.
