Where right at the moment, it is 47, dark, and storming over Washington Park/DU area. I am new to Amazing Ribs, but have been smoking and barbecuing in one form or another for maybe 15-20 years. I am the newly proud owner of a 32" Komodo-Kamado smoker/grill, and the former proud owner of a 72" Lang Hybrid smoker and a Kamado smoker made by Richard Johnson's outfit. I read "Meathead, The Science..." about two years ago and have great admiration for the approach and the science of it. Facts are always better than assumptions.
