Welcome to the Pit! I started smoking in the mid to late 90s on a Brinkman bullet smoker and graduated to a Big Geen Egg in 2010. While the Acorn isn’t a ceramic it has its similarities. I hope I have author and the title right, but it is a great book for exploring the versatility of your cooker. The Kamado Cookbook by Chis Groves.

The Big Green egg was what inspired me to get the Akorn. Similiar performance, but what I could spring for at the time.

Welcome from the Great State of Mind, Texas !!! As one of my fellow Texans eluded to above, Tony C's is very popular down here. In fact I generally season non-bbq food with it in place of salt and pepper. It's very good on ribs and chops, really pairs well with pork. Keep using what you like, explore what others say may be good and welcome to the Pit. May you find smoking happiness in your future cooks !!!
