Welcome from Aberdeenshire! In terms of the thermometer if you're talking about the rather crude dial thermometers that you insert they really aren't that accurate I have just bought one of the maverick wireless ones as recommended on the forum the Maverick 732 version, it's fantastic and lets me wander around the house without constantly having to come back and check a local temperature probe or dial thermometer. I'm pretty convinced that the thermometer is actually one of the most important if not the most important piece of kit so it's worth getting a good one I particularly like the 732 because it has two probes one that gives you the smoker temperature and a meat probe.
