    Hello from Katy Texas..

    I'm into pretty much all types of cooking but BBQ was my first love.
    Started BBQing back in 85,played around with competition Q in the 90's and decided I enjoy showing up and dropping a fifty in the pot and avoiding all the clean up.
    After tiring of BBQ all the time I decided I'd branch out and learn my way around a kitchen.
    Then came Sous Vide which has been a real eye opener and an interesting pairing with Qing.

    Now interested in a pellet smoker because those all night smokes are getting to be harder as I get older.
    Looking forward to picking some brains.

    Welcome to The Pit. You might consider a Weber kettle with a Slon N Sear if you aren't cookin' for too many people. Add a temp controller would make it easier to get your sleep.

          Looking at the Mak 1,Yoder 640/480 and the Fast Eddy PG500.
          Like the Fast Eddy build quality but dont particularly like the side searing area.
          Looks like I have a lot of research to do.

              • Hi, my name is Darrell. I'm an OTR truck driver for over 25 years. During my off time I love doing backyard cooks. I have a 48" Lang Deluxe smoker, Rec-Tec pellet smoker,1 Weber Genesis 330, 1 Weber Performer (blue), 2 Weber kettles (1 black and 1 Copper), 1 26" Weber kettle, a WSM, 8 Maverick Redi Chek thermometers, a PartyQ, 2 SnS, Grill Grates, Cast Iron grates, 1 ThermoPop (orange) and 2 ThermoPens (pink and orange) and planning on adding more cooking accessories. Now I have an Anova sous vide, the Dragon blower and 2 Chef alarms from Thermoworks.
