Hi all, I've always been considered the grill guy in my group of friends, but after spending the last month or so getting more and more into the information on the site I realized I "knew" mostly wrong information. I decided I wanted to try my hand at smoking a couple of months back and started trying to figure out what smoker made sense for my space (a pretty small balcony). One of my favorite things about my condo is that I have a natural gas hook up on the balcony (which came with an older model Weber Spirit E-310 I bought off the previous owner), so I wanted a smoker that could be easily converted to natural gas as well. That search was my first encounter with AR, and while I really struggled with the slow site times, which ultimately(thankfully?) lead me to become a member, I started realizing this place is an absolute treasure trove of information. I know I'm preaching to the choir here, but within a couple of days I gave up on all other sites and picked up a smoke vault based on the review here and its meeting my other criteria. I've done 2 smokes so far following techniques and recipes from this site and I have been blown away by the results and how much I've learned in such a short while. First attempt was brisket and short ribs, and the second was a pork shoulder and short ribs (you know the first one went well because I immediately went out and got a new toy haha). I forgot to take an after shot of my second session, but here are some pics. I'm looking forward to continuing to learn from all of you and further upping my meat game!

Awesome. Great to have you here. Just please be careful on your balcony. A condo complex I lived in about 11yrs ago had someone set their balcony and unit on fire. Not good. After that we couldn't have our grills anymore. There was only one option. I sold my condo and got into a house. No more rules. Love it.
