Hey Y'all. Been cooking on a Recteq 700 pellet pooper since way back when they were called REC TEC. Decided I needed to up my BBQ game and found this amazing site. I've already read enough on here to convince myself that I need a Pit Barrel PBC in my life.....so that'll be here Tuesday. LOL Can't wait to experiment with all the wonderful knowledge this site has to offer, and maybe even provide some of my own experiences.

sclawrence2013 Check out the Pit Barrel section, in the smoking forum. Plenty of info on lighting methods, charcoal amount on cooking times, etc.
I do a 12-10-5 method of lighting.
Light 40 briquettes in PBC chimney for 12 minutes, pour on briquettes in basket for 10 minutes- lid off, then drop in wood chunks, put lid on for 5 minutes without rods in.
Hang or grate food, using rods and putting on lid.
You may need 2 towels and 2 bricks on the lid until the seal is made (Gunk from the grease).
