Greetings Dave. Like you I spend a lot more time viewing on this site than contributing but we will see if that changes a little. Lots of useful info all round here and from what I have seen the people are nice! I am in Florida.
Welcome to the Pit. We’re a happy family.
You’ve already gotten the lecture about not denigrating the WSM, so I’ll only kind of repeat it.
i can’t wait to see some pics o/f your sausage adventure and read about how it went.
Big and fancy doesn’t always mean great bbq. I used a Weber SM for the first several years I was smoking and loved it. There are people here who can take a modified barrel with a lid and turn out incredible food! You are by no means cooking on an inferior smoker.
dbiester I did my first few briskets on an ECB bullet smoker I got with Marlboro Miles. Like Oak Smoke said, it isn’t the cooker that matters, it’s the cook. I liked my WSM a lot, but now I’m glad to/ have a pellet cooker in its place. If your WSM isn’t holding. Temps consistently, there are fixes you can try. Rather than clogging your intro thread, you might want to start another one about the Weber’s issues.
Retired, living in Western Mass. Enjoy music, cooking and my family.
