Hello out there. I have been using the site for a while and thought geez I ought to be supporting it. Yes, I live in NJ and have a smoker, it's just a Weber Smokey Mountain I call "Sheena" bc she's a bit of a punk rocker. Yes it's hard to keep the temp consistent but the water pan helps. Anyway I am off to make sausage for the first time so whish me luck.

Thanks! I mean it's not an offset or anything fancier. I'm working on the Italian sausage recipe from the site. First time I figured I'd stick to basics. Next time might be venison.

Ffft. EVERY smoker has compromises associated with its operation; even fancy high powered stickburners have a compromise involving cost and labor. My Weber KETTLE does everything my Big Green Egg does. It’s different, but I defy anyone to tell the difference between food cooked on the two. Because I can’t.
