I enjoy cooking ribs (pork or beef), pork belly, brisket, burgers, ribeyes, chicken (usually boneless/skinless thighs), and skirt steak for carne asada.

There's some damn fine BBQ in NoVa as well.
Had the single best piece of chicken, in my life, at a wedding in Richmond last year.
Talked to the pit master for about half an hour
He told me EVERYTHING he did
I can't replicate it.
It haunts me.
The pulled pork was also good.

jasonbantry The only actual butcher shop I know of in this whole area is Springfield Butcher, and I am not overly impressed. I tend to get a lot of meat online, and things like pork butt and ground beef just from the grocery store...

Welcome from California! Pretty sure many of us ended up here the same way…wanted to make better barbecue and underwhelmed by local standards.
For me it was a trip to Houston that got me hooked on brisket, and a trip to Memphis that got me hooked on ribs. My search for better techniques led me here!

Tri-tip hits the grill frequently here. I don’t have a Santa Maria style grill, yet - I really wish I did - but I still cook them over an oak fire. Plenty of great tips available here - from me and many others - when you’re ready for that first tri-tip.
As for my handle…it’s actually my last name!
