Hello Everyone. My name Gerry Gore- my family calls me BIG DADDY. I live in Warren County, MS but I’m originally from the great state of Texas.
East Texas bbq is in my roots. Beef of course. I got started smoking about 15 years ago and got my start by reading MEATHEAD’s tips. My grandfather is my inspiration, whom I actually never met. His inspiration came from a photograph of him leaning over a fire pit. He was the pit master for the Grimes Cty. Cattlemen’s Association in his day. I never forgot that picture.
My second source of inspiration is from a pit master from my home town. Joe Allen’s BBQ is what I grew up on and quite frankly, I’ve never had any other bbq I enjoyed as much as his. He died a long time ago- with the recipe. His chopped beef was second to none. Only one other place did I find something very similar. There was a place between Center, Tx and Carthage, Tx. But he only lasted about a year. I’ve been on a quest to try to replicate his recipe. He did something like no one else. 😋
