I'm a senior who has never gotten 8 to BBQ. I inherited a MasterBuilt gravity smoker and after reading the reviews here I decided to replace switches and electronics. The switches I chose are a much better class than what was installed. I also used FireBoard II for the electronics along with their variable speed fan. With that done, my husband (now he's interested!) and I bought a 5-1/2 lb shoulder (Boston Butt) from the local butcher. I'm ready to go except I need advice and can't figure out where on the forum to ask beginner's questions! I did locate Meathead's beginners article, but it doesn't answer my question. Where should I post questions?

Welcome to the Pit from Dallas, TX! You are cooking the most forgiving piece of meat you can do on your 1st cook. You will need a rub. Cover the Butt with a coat of yellow mustard to get the rub tom stick. Set your cooker for somewhere between 225 and 275. When your cooker is set put a chunk of hickory on the fire. Cook to an internal temp of 200 remove the butt and wrap it in double aluminum foil and hold in an ice chest for 2 hours before shredding. Expect the stall to hit when the internal temp of the meat reaches 150-160 and it will take about 6 hours to reach 180. Overall expect a 12-14 hour cook, but maybe a little shorter if you are cooking at 275.
