As I sit here continuing to recover from retina reconstruction surgery, I realized the list of restrictions (no heavy lifting, no driving, no altitude/elevation changes, don’t raise your head, and no outdoor cooking!) has left me without a valid excuse for not posting an introduction, so I’m finally going to check that box.
I started grilling outdoors on a Weber kettle, shortly after getting married in 1995 (because it’s expected you grill something when you invite folks over in the summer, right?)…that transitioned me into low and slow smoking about 10 years later…with plenty of failures, of course, but as the years have gone by, and my equipment has been upgraded, I’ve been successful in racking up more wins than losses. Of course, the losses still occur.
The Weber Kettle for grilling/smoking is gone, gifted to a couple starting out; currently running a combination of a Kamado Joe Jr and Blaze Kamado for grilling. I was an early adopter of a (then) RECTEC pellet smoker, which served me well until I upgraded to an LSG pellet smoker for the majority of my low and slow cooks. Most recently, I fell into a brand-new Badger Barrel for only $99 dollars, which I thought was a pretty good deal, so I’ve been playing with that, too, primarily for whole bird cooks.
Do I consider myself a subject matter expert on any of this equipment or cooks of meats/sides? Well, when I stay in my comfort zone and repeatedly prep/cook the same thing under the same conditions, I can hold my own, but when I get a wild hair and step outside that comfort zone, I swing and miss….practice makes perfect and I keep at it until I’ve dialed it in….
Of course, not at the moment; my eye surgeon says this “break” will last until at least April 30th, and then we’ll reassess from there. Does that mean I’ll be racking up more posts? Could be, especially since having to keep my head down means my smart phone is getting a lot more use.
