Aloha from Kailua Kona, Hawaii. Big day today: joined Pitmaster Club and just ordered a Keveri H1 oven grill through Home Depot, delivery next month. Currently I work with a Kamado egg (great charcoal heat but no real control), a Pit Boss pellet smoker, and an old gas grill I inherited from the prior owner of the house ten years ago (I put a metal griddle top on it and use it principally for quick cooking vegetables, occasionally seafood). Anyone else on the Big Island doing meet-ups???

Oh heck, I’d love to… problem being that I’m halfway around the planet! We’ve been to the BI twice, as tourists, most recently about 20 years ago. Loved it, glad to leave, the feeling was most likely mutual which is as it should be. Stayed at the Fairmont Orchid the first time, and then at a condo rental near Hilton Waikoloa Village.
No heat control on a kamado? For all that is known about them, that is reputedly what the do best. Which kamado do you have? Maybe I can help. Maybe not, but maybe.

Gear: 26" Weber Kettle and Pit Barrel Cooker
Accessories: Spider Venom fan, and SnS Temp probes.
I enjoy cooking ribs (pork or beef), pork belly, brisket, burgers, ribeyes, chicken (usually boneless/skinless thighs), and skirt steak for carne asada.
Beverages - Alcohol isn't my jam.
