You came to the right place Amir. I suggest that a book titled "Texas Eats" authored by Robb Walsh will add to your understanding of Southern states food. Texas is a patchwork of many different ethnic groups and varied geography leading to a very interesting food culture. Good luck to you.
ps.............my Texas Red (no beans) chili recipe has its' roots in this book----don't tell anybody!!

Louisiana cuisine has been influenced from lots of different cultures. You will find some similarities between La. and dishes from Mississippi and the 'low country' of Georgia up through North Carolina.
Southern folk love to feed people. It is common to take home a plate of food when you have been invited over to eat. "Here, let me fix you a plate to take home."

I need to add that north Louisiana and south Louisiana cultures are different. I am linking an article that you might find interesting.
