Have I been doing it wrong all my life? Most of my bbqing has been to crank up the heat to warp factor 10, dangle some meat on the grill only succeeding to achieve a carbon jacket with a raw meat centre.
I have moderated my heat now and have some success. The Pitmaster Club, with all its information is going to be a game changer.
The equipment I have now is a 21 inch Bar-Be-Quick Kamado and a recently purchased temperature monitor with blower to maintain steady temps whilst low n slow.
