Howdy from Houston and welcome to The Pit, we’re glad to have ya….on this side for a change. If you’re looking to get a kettle, which you should because they’re so versatile, you might want to give the SNS kettle a look. They have a lot of features not found on comparable kettles.

Custom built duel fuel "whole hog" cooker.

If not cooking outdoors, I am cooking on the stovetop with my 14" carbon steel wok, 12" CI skillet, or in the oven with my two Lodge CI pizza pans, or two dutch ovens. I've also got a nifty Lodge carbon steel grill pan that rocks for veggies outdoors.

Never had time to do the BJCP stuff though. Went through one of their sensory training kits with some other guys in my local homebrew club a number of years ago. I shudder to think of some of the "off flavors" we dealt with...
