A Texan stuck in the Middle East

Hi all. Name's Leland, from Houston originally I'm active duty Navy stuck in the Sandbox over here. I have been craving some good ole Texas BBQ for a while now (going on two years) so I figured I'd do it myself. Bought a cheap charbroil offset smoker and found a place that sells Whole Packers. The cattle is from New Zealand. So far so good.

Welcome to the Pit, Leland! Former USAF here (Vietnam era) ... but on your behalf, I'll be rooting for Navy from now on ... whenever they aren't playing Air Force
