Welcome from TN. Be patient with the WSM, there us a learning curve, but with the fan it shouldn't be as steep. Once you get it dialed in, I think you'll love it.

I enjoy cooking ribs (pork or beef), pork belly, brisket, burgers, ribeyes, chicken (usually boneless/skinless thighs), and skirt steak for carne asada.

Beverages - Alcohol isn't my jam.
