Hi I’m Bob and new to the Pit. I’ve recently plunged on a smoker and thermometer- WSM 18.5 with Signals Thermometer +billows on the way as I type this . Live in NJ but loved what I thought was good BBQ as a kid. Last 15+ years have had opportunity to travel to KC and have been hooked on beef burnt ends since. Finally decided as mini midlife crisis that I want to have great cue at home and trying to get my Weber Genesis 330 down to a constant 225 was not happening. Already digging into posts like salting meat before rub and seasoning a new smoker. Can’t wait to get smoking in earnest

Been smoking a handful of years, just got serious in the last year. Thanks to AR n @glemn picked up an SnS Kamado for appx 1/3 price of new. I dont think he used it twice. Love AR! keep calm n smoke on! Miss you Bonesy.

And I noticed you mentioned the temp 225°. A frequent mistake of new bbq enthusiasts is to chase 225°. Anything between 225° and 275° is fine, and short trips above or below that won't hurt. It will take a while to learn your cooker, but if you do need to make changes, make 'em small and allow some time for the temp to settle.
Not so much chasing 225. More like trying to get under 300. Even with one burner on its lowest temp. Needed to prop lid. And I did the reset the gas regulator truck too. Im tracking getting a range of 225-275 with charcoal I will be good to go.
