I have done 2 racks of ribs on the kettle using the SNS insert.

Okay, folks!! I get it - the SnS has many of you on board (or in the pit, as it may be LOL). BUT - I'm not made of cash AND I've got alternate methods that, IMHO, accomplish the same purpose (more or less, YMMV )

Imma try the rib rack to increase indirect real estate and see how we do with the SnS alternatives that I already have on hand (read: bought and paid for). IF, and that's a pretty big 2-letter word for this application, again, IF the alternatives don't give me the low n slow I'm lookin' for, THEN we'll look at some other low cost alternatives and THEN at the SnS
