                    Thank you for the replies and warm welcome!!
                    For those of you that asked, I attached a couple pictures of my first smoker build. I was going for a Carolina style cooker with direct heat and a lot of distance between the meat and the coals (top rack is 36” above). The first photo is of my boy (7 at the time) inside of the cart that would become the smoker. It initially had two racks inside, found a stainless baker’s rack at a garage sale and modified to fit inside and give more racks with a slide out option.
                    For years I dreamed of cooking with real wood. I really look forward to cooking in a large thick walled offset. The cooker in the photos works best with charcoal or coals transferred from a burn barrel (but I live in a neighborhood and the burn barrel isn’t always the best option. When the offset is done and operational, I am hoping to convert this guy to a cold smoker, I think it will be ideal for that.
