Hi my name is Alberto and I am entering into my first KCBS sanctioned bbq competition. I was a professional bbq caterer for years and a restaurant chef classically trained. I love barbecuing and I'm looking into making the jump into this crazy, but lovely sport. If anyone would be able to offer some advice I would be really grateful!

Your organizational & planning experience you have developed will serve you well in competitions as the timing is a critical component. There are more than a few folks here on the Pit that have competed so I am sure they will chime in with their thoughts.
